Dr.Michael Wray, Professor of Restaurant Management at Metropolitan State University Denver, International Guild Sommelier and its resident expert in food pairing with beer, wine and spirits, sensory and history, guides guests through a fun, highly informative and engaging guest-interactive dinner evening, presenting his interpretation of the complementing features and attributes of the food, beer, wine and spirits of pairings selected. Guests enjoy a real-world “hands-on” opportunity to discover basic beer and wine sensory knowledge and skills, and sample and evaluate a diverse selection of Colorado Classic dishes selected and paired by Dr. Wray with award-winning Colorado Governors Cup Beers and Wines. Presented in a specially designed sensory analysis student lab and a culinary demonstration theater outfitted for experiential fine dining, join the fun in an evening of tasting and education of some of the unique beer, wine and food produced in and synonymous with Colorado.
